Cooking project #6 – Onion and cheese tart

It has been a while since I last posted a recipe. So here we go again. Today, I spontaneously wanted to bake something and I was lucky to find an easy recipe for a tasty onion and cheese tart (diameter ca. 28cm). It is a great tart to bake during those dim and grey autumn days.
As always, taking the picture was the hardest part of the task.

Onion and Cheese Tart

What you’ll need:

  • 30g butter
  • 300g onions
  • 200g grated cheese (I used Swiss Emmentaler)
  • 30g flour
  • 200ml milk
  • 100ml cream
  • 2 eggs
  • a pinch of salt

What you’ll need for the dough:

  • 250g flour
  • 100g butter
  • 100ml water
  • a pinch of salt

What you need to do:

For the dough, just mix the flour with the butter until you get a crumbly mass. Add the water and salt and start kneading until you get a nice and smooth dough.  Line a baking tray (diameter ca. 28cm) with baking paper and put the rolled out dough onto the tray.  Put it in the fridge for a while.

  • Heat up the butter in a frying pan and carefully fry the sliced onions in it until they are soft but still pale in colour. Let them cool down a bit
  • Mix cream, milk, flour and the eggs in a bowl and add a bit of salt and pepper (as much as you like)
  • Spread the cooled down onions onto the dough
  • Spread the grated cheese over it
  • Cover everything with the cream-milk-flour-egg mix and put it in a preheated oven (200°C)
  • Bake at 200°C for about 25-30 minutes

The best thing about this recipe is that you can vary it to get other delicious tarts. Why not add some bacon for example?
